1 cup (125g) all-purpose flour
1 cup (140g) corn meal
1/2 cup (100g) sugar
4 tsp (20g) baking powder
3/4 tsp (5g) salt
1 cup (235ml) milk
2 eggs
1/4 cup (50g) butter (margarine or shortening) softened
1 can cream corn
DIRECTIONS
In a mixing bowl, combine flour, corn meal, sugar, baking powder and salt.
Add milk, eggs and butter. Beat for 1 minute.
Add corn and stir. Pour into a greased 9-inch square baking pan.
Bake at 425 F (220 C) for about 20-25 minutes or until the top is golden and tests done with a toothpick or knife.
This goes well especially with chili, but is very versatile. Adjust the sugar to suit your taste. Enjoy!

This is excellent. I also love to mix in french fried onions, shredded cheddar cheese and crumbled bacon into the batter. It is delicious.
