Vegetarian Recipes Needed

My girlfriend is a vegetarian but does include eggs and fish in her diet. I would like to know some recipes that I can make for her. A veggie stir fry can only go so far. She does love Thai food so something with a Thai twist to it would be really helpful.

hey honeybunny, (cute name)
and welcome to mels, now, i need to ask where abouts in NY you are from, because i would suggest making a vege curry, but i know that some ingredients are difficult to get in America, but basically all you need is

sunflower oil / olive oil
ground coriander
ground cumin
ground tumeric
garlic
onion
salt
chili (optional; any kind; paste or the real deal)

tin of tomatoes
coconut milk
any veg
chickpeas (optional)
fresh coriander (optional)

now it's all about the order (same with thai curry too)

1) fry up all the spices, garlic, onion, in a bit of sunflower oil, to create a paste.... you will see the consistency as you do this, approximately 2 teaspoons for the coriander, cumin and tumeric, you can always add more coriander, or a drop more cumin, but hold off on too much tumeric, its mostly colouring. Go slow with the chilli depending on taste

2) Add the tomatoes, and diced veg, now brocolli and carrots take longer to cook than courgette and mushrooms, so you may want to put them in order, i usually then add chickpeas or potatoes for a bit of substance

3) Cook on a medium heat for about 15 minutes, check consistency

4) Add coconut milk, can or block - cook on a slow heat

5) Wait... keep tasting, if flavourless you may need to add some more spice or practice making that paste at the beginning

6) Make basmati rice, one cup of water, two cups of rice, bring to boil, add pinch of salt, put lid on, turn heat to lowest possible, don't lift the lid until the holes appear in the rice, and rice looks fluffy. If you dont have a pot with a see thru lid, treat yourself to one, or get a rice cooker, lol

7) 45 mins have passed, since you put the veg in, then you should be able to eat. but even better if u turn it off and wait until tomorrow, or at least make enough for the next day, it tastes better

Now fish... does she like Salmon? Good cooking pot for the oven, salmon on top of spinach leaves, squeeze some lemon juice, add fresh quartered tomatoes, leeks and red / yellow peppers (cut thin) put in the oven for 45 minutes, the veg cook in the salmon oil, boil some new potatoes, have with salad. Easy!
