CHEESE ENCHILADAS .... dutch oven

INGREDIENTS
4 c. Monterey Jack, shredded
2 c. Cheddar, shredded
2 medium onions, chopped
1 c. sour cream or plain yogurt
1 c. chopped green bell pepper
3-15 oz. cans tomato sauce
4 T. chopped fresh parsley
1/2 t. dried oregano
18 flour tortillas
3 T. chili powder
3/4 t. ground cumin
1/2 t. pepper
2 cloves garlic, finely chopped

PREPARATION
Grease dutch. Mix Monterey Jack, one cup Cheddar cheese, 1/2 onion (chopped), sour cream, parsley and pepper. Spoon about 1/3-1/2 cup mixture onto each tortilla around filling and face seam side down. Mix remaining ingredients except cheese. Pour over enchiladas. Sprinkle with remaining cheese. Bake until hot and bubbly. Serve about 18.

COOKING TIME: Approximately 30 minutes

B-B-Q CHICKEN ... dutch oven

INGREDIENTS
2 lbs. chicken strips
1 can coke
barbecue sauce

PREPARATION
Throw it all in the pot and stir.

COOKING TIME: 1 hour

Meat Loaf

4 lbs. of ground beef
3 eggs
2 cups bread crumbs
1 cup of ketchup
1 large onion
1 cup milk
2 tsp. salt
1/2 tsp. pepper

Mix beef, 1/2 cup of ketchup, and the remaining ingredients thoroughly. Spread into lighly greased Lodge 10" or 12" camp Dutch oven.

Stew at 350º for 60 minutes and top with remaining ketchup (and brown sugar, if desired) and bake for 15 minutes.

Cherry Chocolate Cake

INGREDIENTS:
1 box chocolate cake mix
1 16-ounce can cherry pie filling
1 12-ounce can Sprite


Combine all three ingredients in Dutch oven, in order listed above, and mix until blended. Put lid on Dutch oven and set over hot coals. Place about six coals on top of lid and let cook for about 15-20 minutes.

Preparation time: 30 minutes

Chicken Pot Pie

INGREDIENTS:
2 large chicken breasts, cooked and cubed
2 large cans mixed vegetables
1 can cream of chicken soup
1 can cream of mushroom soup
1 10-pack refrigerated biscuits

PREPARATION:
Mix chicken, vegetables including liquid, and both cans of soup. Put in a Dutch oven and warm over coals. Do not boil. When warm, place biscuits on top of chicken mixture and cover with lid. Place coals on lid.

Cinnamon Pull-a-Part

INGREDIENTS:
1 1/2 cups sugar
3 cans biscuits
1 stick butter or margarine
1 tablespoon cinnamon
PREPARATION:
Mix the cinnamon and sugar in a container and set aside. Melt butter and open cans of biscuits. Dip biscuits one at a time in the butter and then in the sugar and cinnamon, making sure each biscuit is fully coated.

Place each coated biscuit in a bundt pan. Place bundt pan in a Dutch oven. Depending on the size of the Dutch oven, place 8-10 coals underneath and double that for the top. It should cook in 30-35 minutes. When it has cooked, take the bundt pan out and turn it over onto a pan or big plate. Use a fork or fingers to eat.
Servings: 10 or more
Preparation time: 35 minutes

Porcupine Stew

You can also substitute instant rice and broth for water and Rice-A-Roni.
INGREDIENTS:
3 pounds ground beef, chicken, or turkey
2 boxes Rice-A-Roni, any flavor
1 onion, chopped
1/2 cup instant mash potatoes
3 eggs, beaten
1 pound carrots, diced
5 potatoes, diced
1 can green beans
1 can corn
1 can diced tomatoes
PREPARATION:
Mix meat, onion, Rice-A-Roni and flavor packet, mash potatoes, and eggs together. Make into meatballs. Brown in a Dutch oven. Add five cups of water and simmer for 30 minutes. Add other ingredients and simmer for another 30 minutes.
Servings: 10
Preparation time: 1 hour

American Chop Suey

sweet italian sausage
cooked macaroni noodles
tomatoe soup
onion
ground beef
sweet corn (canned)
mozarella cheese

cook sausage in dutch oven, then set sausage aside
cook ground beef in dutch oven
add chopped onion, corn, sausage, cooked noodles, tomatoe soup and cheese to pot, stir well...cover... cook in coals another 15 minutes... serve with bread and butter

I sure hope y'all like sweet sausage, chicken, cheddar cheese, peppers and onions... cause right now, that's all the fresh food we're totin in the cooler.

MONDAY morning during breakfast, we are planning a grocery run... come prepared with suggestions and the ability to HELP.... (suggest, shop, cook, wash, tote )
