Slop Soup

1 rack smoked ribs
1 sort-of-large head cabbage
10 fist-sized potatoes
2 or 3 cans wax beans drained
about 1 cup flour
1/4 lb. butter or more
fresh bread...............

quarter, core, and quarter again the cabbage... toss into a large pot
wash and peel (if you prefer) potatoes, cut into cubes... toss into pot
cut rack into 3 or 4 sections ... toss into pot
JUST cover pot ingredients with cold water and set on medium flame stove to cook... will prob take about an hour... stir now and then...
when potatoes are well done, turn off heat
remove rib racks (you can pick and add meat optionally)

slightly mash the potatoes (yep, right there in the pot, cabbage and all... just a few good smushes with the masher)
add wax beans to the pot
... add a good dash of salt and pepper...

In a large skillet, melt 1/4# butter over low/med heat (yer gonna brown the flour not the butter) ... when butter melted, gradually add flour, keep stirring and swooshing around in frypan.... leave heat alone and just keep stirring/swooshing... eventually the flour will turn very brown... (about 2-5 minutes)... when flour is brown, dump into pot... stir well - you may have to smash browned flour clumps against pot side to get them to 'dissolve' - its easy .... cover pot

let soup sit about an hour... reheat and serve with fresh bread and butter

does NOT freeze well.... this batch will easily serve 6 or 8 (2nds included in the approximation) .... will store well in fridge for about 5 days.
