Camp / Dutch Oven Jambalaya

Camp / Dutch Oven Jambalaya

Camp Jambalya

Boneless - Skinless Chicken Breasts 1 lb
1/2 lb Smoked Bacon (Smokier the better)
1 each Yellow, Red and Green Pepper
1 medium yellow onion
1 lb smoked sausage or bratwurst (again heavy smoke flavor is best)
8 oz (approximate) Small Salad Shrimp
1 regular can of Cream of Mushroom Soup
2 cups of minute rice
Cajun or Jambalya Seasoning to taste
1 cup water
Dutch Oven
hot coals

Instructions Cut all ingrediants into bite size pieces
Brown the bacon first - do not drain
Season the chicken before cooking
cook the chicken completely
add the vegetables and cook until the onion is somewhat clear
Add the smoked sausage, Shrimp, the cream of mushroom soup and the water
simmer until bubbly
remove from the heat (either fire, charcoal or oven)
Stir in the rice and let sit COVERED for 5 to 10 minutes
Grab the seasoning and some hot sauce if desired and enjoy big time!
Comment Usually this will feed about 15 people, you may want to add more rice and soup to stretch for very hungry ladies. They never seem to get enough. You will aso need some bread and butter to go with it!

This is EXCELLENT... as agreed upon by the ladies at Mels First Annual Campout.

1. We added the shrimp AFTER removing the pot from the fire... and let it sit a good 10 minutes before eating.
2. We cheated a bit, rather than making use of individual spices, we used Zatarain's Jambalaya mix... 2 boxes.
3. Zatarain's already contains rice, thus we added no extra rice.
4. (If I'm wrong.... one of the Junior Camp Cooks must correct this submission, it was their evening to cook while the rest of us did as we were requested. = ask Lil Princess who was in charge).

Oh, and this recipe definately requires one Lil Princess to be in charge!!! What an awesome pot of Jambolaya she cooked us......

Real? How about posting that sauce recipe?.... the red one with all the tomatoe that lasted for days.... you know, the one that followed us religously in the round container with the purple lid..... hmmmmm?

you ladies missed out on one major element in making that jamblaya. THE WONDERFUL LADIES AROUND THE FIRE... without it.. it would've never been as good Smile
