non-vegetarian recipe

My hobby is cooking, and this is one of my recipes.

Chilli Chicken and bacon salad with mango
(this is to serve 2-3 people)

Ingredients:
olive oil
white wine salad vinegar
half a bulb of garlic
one lettuce, doesn't matter which kind, or a bag of mixed green salad leaves works fine.
one small pack of cashew nuts
one mango (i prefer Australian mango to Philippino, more juice, fuller taste).
two chicken breasts
red chillis, either dried or fresh, to taste
3 strips of bacon, unsmoked is better i find
one ripe avocado
French Dijon mustard (the plain one, not the seeded type).


Peel and crush the garlic, put in a frying pan with half cup olive oil, bring to heat until garlic pieces begin to brown, remove and allow to cool.
Wipe out the pan, chop bacon into small pieces, fry until cripsy, remove and drain.
Chop the chicken into rough cubes 1" x1" is about right.
Fry slowly until browned, but before that... prepare the salad.Break the washed lettuce into sizes you like, throw in a salad bowl.
Peel, stone and cube the avocado, throw that on the lettuce.
Peel and cube half the mango, scrape your knife inside the skin to juice it onto your chopping board, you can also juice the fibrous heart of the mango too of course.
Mix half a cup of the salad vinegar with the oil/garlic, and add a really big heaped teaspoonful of the French mustard into it. Mix well. This is your dressing.
Your chicken pieces should be browning golden now, keep them moving, add in whatever amount of red chilli you like, i like about 2 heaped teasponfuls of chopped dried chiili, and throw in the bacon bits again and mix well.
After about 1 minute...add this bacon/chicken/chilli onto the avocado/lettuce.
Add the mango, and the juice, right on top of the chicken/bacon chilli.
Quickly toast the cashews, and throw them on top of the mango.
Add dressing either in the bowl, or when served, but before that, this salad needs to be tossed quite thoroughly to get the benefit of the mango sweetness, and the chilli heat combination.

Serve with fresh baguette, and a chilled white wine.
A Chardonnay goes well with this.

thanks v much,
you could try this with a good white fish instead of chicken, and instead of bacon, throw in some walnuts and salted peanuts.
that'd do it.

Sounds good...

If you have a very good lasagne recipe soul you pass it along as well? It is one of my favorite dishes. In fact, you and Cavewoman had posted recipes so maybe we should have a new section with 'recipes'. pssssssssssssssssssssssstt Mel.... sending you the link to this thread Razz
