This is a recipe
You Need
Enough chicken to feed the group - usually 1 average size whole chicken feeds 4
Fresh garlic - average use is 3 good chunks of clove
Flour tortillas
Peppers = 3 Pablamos (or 3 banana), 1 or 2 jalapenos
Onion - chopped.. a medium size (tennis ball)
Sour Cream ( 1 pint per whole chicken)
Rice = enough to feed four
Cook whole chicken injust enough water to cover = make broth - skim etc. fat... cool... deskin chicken when done and debone... save broth
Burn peppers on stove top or grill ( literally lay them in the flames until black) [electric only?=dry skillet and burn]... cool peppers, split and remove seeds and stems
In large skillet or deep sided pan... dribble a bit of vegetable oil to cook freshly diced garlic/mashed garlic (the more the merrier).. add diced onion, when onions clear and garlic not burned, toss in peppers
quickly enough to prevent burning, ladle in chicken broth, NOT a lot, add more after sauce has begun cooking with sour cream, if you wish
dollop in sour cream, all of it
add chicken meat, then... add broth as desired
sauce is too hot (spicey?), toss in a chunked, skinned, raw potatoe, let simmer a while
not too hot = let simmer a bit, about 15 minutes, then let cool for about 30 minutes
MEANWHILE: on stove top, assuming gas stove, burn tortillas a bit over open flame = flop tortilla onto burner over flame and allow to blacken a bit (with practice you will develop knack)... electric only? = do the best you can in a dry skillet
SERVE = plop a bunch of chicken mix into bowl, spoon in some rice,
EAT = tear a tortilla into manageable size pieces, scoop chicken rice mix into tortilla (i pinch a bunch) and stuff in mouth
Salt pepper = your choice
Do not skimp sour cream, peppers or garlic
Stores very well, is especially excellent reheated on day 2 or 3... lasts about a week _________________ " The sorcerers in life are created within each of us" --- Lynn V. Andrews

it IS good and you can always tone it down by leaving out, or cutting back on the hotter peppers... banana peppers really aren't that spicey... try just leaving out the jalapenos... and don't try substituting a traditional bell pepper - it just doesn't taste right with this...
as to its name? well, i couldn't pronounce whatever my sister said in spanish, so we renamed it... tho she did say that in spanish, this name translation is close.
we eat this stuff at LEAST 2x a month.... _________________ " The sorcerers in life are created within each of us" --- Lynn V. Andrews
